SEPM 12.1 Policy Windows 2008 DC / Exchange

Hi all, 

After my SEP 11.x environment died i had to reinstall everything. only the engineer who installed the previous version did not document everything ( almost nothing) . So the dessision was made to install version  12.1 on a new server and move the clients over ( we dont have that many clients) 

my question is about the policy's in SEPM, i read that SEP client will autodetect the roll on a windows server like DC or Exchange or SQL ?. 

What if by "accident" the server gets linked to a policy that scans everything , which will overrule what ? which settings are leading ?  also can i download/view templates of policy's like for Windows Terminal Server of File servers .

any help would be greatly appriciated
